Seedy Slaw

Makes 6 x 1 cup serves


2 C finely sliced red cabbage

2 C finely sliced white cabbage

2 C grated carrot

3/4 C mixed seeds

-pumpkin seeds

-sunflower seeds

-Poppy seeds

-White sesame Seeds

-Black sesame Seeds

1/4 C chopped parsley

Optional - Grated beetroot is a great addition for extra colour and an earthy flavour.


Lemon dressing

1/4 C rice bran oil

1 clove garlic, crushed

1/2 tsp ground cumin

1/2 tsp salt

2 Tbs lemon juice


Cut or grate vegetables by hand or use a food processor with a grating or slicing blade to prepare vegetables.

Make lemon dressing by mixing ingredients with a stick blender, shaker or blender.

Mix all ingredients together in a big bowl.


Once the dressing is added to the vegetables it won't last longer than a day. If you want to make ahead of time, slice the vegetables and add the dressing and nuts just before serving.
