A basic moist muffin mixture that can be given the 'Wow Factor' with addition of Chocolate Chips / Fruit chunks /Crystallised Ginger etc.

1 Cup Sugar

2 Eggs, beaten

1/2 Tsp Vanilla extract

1/2 Cup Vegetable OIl

100g ( ish) Plum puree

1 Cup Self raising Flour

1/4 tsp Cinnamon

1/4 tsp Ground cloves ( adjust amount to taste)

Lemon glaze

1/2 Cup Icing sugar

1 Tbsp Softened Butter

1 Tbsp Lemon Juice

( The glaze could be more lemon-y in my opinion, I suggest using less icing sugar and adding more lemon juice. Or replace with an oaty crumble topping)

Beat together first five ingredients, add the dry ingredients and and blend until just mixed. Fill lightly greased muffin tins two thirds full. Bake at 200C for 15- 20 minutes.

Mix together  glaze ingredients  and  spoon lemon glaze over muffins while still hot.

Yields 2 dozen mini muffins or 1 dozen standard muffins.
