3 Large Eggs
1 Cup minus 2 Tbsp sugar
2/3 c melted butter ( Olivani spread for dairy free)
1 cup flour ( corn meal for gluten free)
a dash of vanilla essence
1 tsp baking powder
1 tsp cinnamon
3 Apples ( if they are large you may only need 1 or 2)
Preheat oven to 180C
Grease a 24cm springform pan.
Beat eggs and sugar together until thick, stir in melted butter. Sift together the flour, vanilla, baking powder and cinnamon.
Fold dry ingredients into the eggs. Pour batter into the pan.
Peel, core and slice the apples. Arrange the slices on top of the cake mix into two circles, one apple slice overlapping the next. Sprinkle cinnamon and sugar on top.
Bake for 40 minutes on the middle rack, until the top of the cake is nicely browned and a knife inserted in the middle comes out clean ( you can't really do the 'spring' test on this one). Serve with whipped cream if preferred.
