: Recipe adapted from The Australian Womens Weekly Easy Greek Style Cookery.

 12 Medium potatoes or Yams

1/4 C Olive Oil

1/3 C Lemon Juice

1 1/2 Tbsp Grated Lemon zest

2 Tbsp chopped fresh Rosemary

2 Tbsp chopped fresh Thyme

1 1/2 tsp Cracked black Pepper


Preheat oven to 200C

Wash and prepare vegetables - peel or leave the skin on depending upon your preference

For Potatoes, cut into 3cm cubes - Yams, cut in half if they are large or leave whole

Put them in a bowl, combine the remaining ingredients, pour over the vegetables, mix well together .

Lay on in a shallow baking pan, don't pour any excess marinade into the pan.

Cook in the oven for approximately 50 minutes, turning occasionally until the potatoes are tender then turn the heat up to 230C

and cook for up to 20 minutes further until browned and crisp.

This is delicious with Lamb, flavoured with lemon, garlic and herbs!
