1 large onion
3 rashers of bacon
1 cup Flour
1 tsp baking powder
1/3 cup oil
1 cup grated cheese
Preheat Oven to 180C
Top and tail courgettes and grate coarsely. Peel and finely chop onion. Chop up bacon into small pieces. Set these aside.
Sift flour and baking powder into a bowl, combine eggs and oil in a smaller bowl and mix lightly with a fork.
Make a well in the dry ingredients and add egg mixture followed by courgettes, onion, bacon, cheese and salt.
Mix together well.
Spoon into a greased 3 cup capacity pie dish and bake for 40 minutes or until golden brown and springs back to the touch.
Lynn's suggestion - Add 2-3 cloves of crushed garlic to the mixture and add slices of tomato and a sprinkle of parmesan cheese to the top of the slice before baking.
