Serves 4 as a light meal
2 cucumbersAbout 30 cherry or grape tomatoes 1 avocado2 tablespoons chopped fresh basil1 cup fresh mozzarella (use small balls or chop larger balls into pearl sized dice)1 avocado1 tablespoon extra virgin olive oil2 tablespoons balsamic vinegar1 teaspoon garlic powderSalt and pepper to taste
Wash, dry, and dice the cucumbers. Wash, dry, and halve the tomatoes. Dice the avocado.Place the cucumbers, tomatoes, and avocado in a bowl. Add sliced basil and mozzarella. Mix the oil, vinegar, garlic powder, and salt and pepper in a small bowl or jar and pour over. Mix gently.Enjoy immediately.Feel free to change up the ratios of vegetables to your personal taste.
