1 Tbsp Oil
1 Large Leek (white part only) finely chopped. If you struggle to clean leeks see below *
2 cloves Garlic crushed
3 rashers of bacon, rind removed and chopped
1 medium potato, peeled and cut into small cubes
1 1/2 litres of Chicken Stock ( Don't read this as cups like I did and end up with a risotto like result!)
1/4 c green or brown lentils
sprig of Rosemary, cut up fine
1/2 c of Orzo, risoni or other small pasta
-Feel free to add other vegetables if you have them - carrots will add a bit of colour!
Heat the oil in a large saucepan and cook the leek, garlic and bacon until soft. Add the potato, stock, lentils Rosemary ( and any extra vegetables) and bring to a simmer. Simmer for 15 minutes and then stir in the Pasta. Continue to simmer for a further 15 -2 20 minutes or until the soup is thick and the lentils and orzo cooked.
* If you struggle to clean the grit or dirt out of leeks, Remove the outer layer, cut them into small rings and seperate them into a fine mesh sieve and run water through them until the water is running clear. Drain well and use as you need to.
